Because it comes with a stainless steel threshold ramp, this Traulsen AIH132H-FHS hot food holding cabinet can accept a pan rack as tall as 72 inches that operators roll inside. This single-section unit's full-length stainless steel door measures 271⁄8 inches wide by 723⁄16 inches high to accommodate a pan rack. When opened more than 120 degrees, the door locks in place so users can move the pan rack into the unit without holding a door open. To withstand heavy use, the interior is made of anodized aluminum, while the exterior has a corrosion-resistant stainless steel construction.

To ensure all food on the pan rack is warmed efficiently, the Traulsen AIH132H-FHS holding cabinet uses a fast-acting ducted fan air distribution system, which circulates air uniformly to remove cold spots. Its serpentine-style heater generates and maintains temperatures between 140 and 180 degrees Fahrenheit to create a safe holding environment, and the cabinet and door are insulated with 2-inch-thick polyurethane to preserve temperatures. Its microprocessor system is a user-friendly interface that enables operators to adjust temperatures, and its visual alarms alert operators when critical events occur, such as a power failure.
